Choose between the see-and-be-seen main dining room and the water’s-edge terrace. Or book one of the 11 private dining rooms in the garden, providing discreet seclusion for 6 to 16 guests.

Chinese Food: Elevated to a New Level of Flavour

Jin Sha’s carefully planned menu reflects regional traditions with a showcase of authentic Hangzhounese, Shanghainese and Cantonese dishes. There’s a focus on locally sourced ingredients, taking advantage of the area’s reputation for bountiful, healthy produce and freshwater fish and seafood.

“At Jin Sha, we are presenting one of the world’s great cuisines in its truest form,” says consultant chef Tony Lu. “Guests will recognise many dishes on the menu, but when they taste them here, they are in for a surprise.”

Among the specialties:

  • Beggar’s Chicken—a local Hangzhou dish filled with bamboo shoots and ginseng, and wrapped in a fragrant lotus leaf.
  • Braised Pork—a Shanghai specialty enhanced with small abalone.
  • Double-Boiled Fish Maw Soup—a Cantonese favourite with sea whelk and cordyceps, a type of fungus used in traditional Chinese medicine.
  • Fried Local Shrimps—cooked with the region’s famous Longjing (also known as Dragonwell) tea.
  • Black Sesame Cream Pudding—served with jasmine tea ice cream.

For more casual occasions, Four Seasons Hotel Hangzhou at West Lake also features one other restaurant—WLB (West Lake Bistro) for all-day dining and international fare—and two lounges—The Bar for cocktails, and the Lobby Lounge for traditional Chinese tea service and other light refreshments.
